Banana Bread Anyone?

This is our families all time favorite Banana Bread recipe. We make it all the time and it never seems to last very long...it ends up in our tummies in minutes. Nothing like a slice of Banana Bread topped with butter, fresh out of the oven.

Easy Banana Bread

1 stick butter (or margarine)- melted or softened

1 cup granulated sugar

2 eggs

Cream these ingredients together

Add:

1 3/4 cup all purpose flour

1 tsp. baking soda

1/2 tsp. salt

Stir all ingredients together until well mixed.

3 Lg. over ripened bananas

Mash in separate bowl and add to batter.

Pour either into one large loaf pan to make a tall loaf and cook for approx. 1 hour or two loaf pans to make smaller, shorter loafs for about 30 minutes in a 350 degree oven. Check for doneness by inserting a knife- just a little batter should remain on knife to ensure that it will be moist and not too dry.

You can also add walnuts and anything else you may think of. I've tried this recipe with whole wheat flour. I think I've also tried half and half(whole wheat and white flour)....I'm sure you can make a healthier version to try to steer away from the refined flour and sugar, but just not the same:o)
